Daily Dairy Consumption Caused Lactose Intolerance
Eating ice cream, yogurt, cheese and cream sauce, were treats I used to enjoy up until I started to slowly
develop an intolerance to dairy products. I took it for granted when I used to be able to digest dairy with ease. In fact, I remember while working for Friendly’s Restaurant in East Providence RI, I used to enjoy a scoop of a different flavor of ice cream once per day.
Lactose Intolerance = Exacerbated Allergies
As I gravitated towards my thirties, I began to develop and intolerance to lactose. By the time I reached
forty, I could no longer consume dairy products. In fact, my body sharply (for those of us who have had
a dairy episode, you know what I am talking about) could no longer digest dairy. I have now developed
an allergy to dairy. Needless to say, this drastic change was very difficult for me to accept. It was even
harder for me to learn how to avoid dairy and substitute different products in place of dairy in my diet.
What is lactose and why do we develop the inability to digest it?

After trying out different dairy free alternative food products, I can now say that I am grateful to have
